This link will take you to a Wiki that contains a manual on rapid surveys entitled: Rapid Health Surveys: Principles and Sampling Design Handbook. I worked with colleagues at Macro/ICF to develop it for the Public Health Institute. It is an open source handbook and is designed for field practitioners to help them gain a background in how to conduct rapid, population-based surveys (quantitative). It focuses largely on questions of sampling but provides links to a large set of web-based resources that cover issues such as survey instrument design, monitoring and evaluation, training survey teams, data analysis and report writing. I hope that it will be a valuable one-stop shop for practical field research. In time I hope to open the site to allow people to add chapters, examples and to correct anything that is incorrect. For now you can freely use any parts of it.
